Our family winery is located in the picturesque village of Bořetice in a group of cellars below Kraví hora in the centre of the so-called Free Republic of Kraví hora on the route of the Blue Mountains cycling trail. We farm less than a hectare of vineyards and all the work on the vineyard and then processing in the cellar is done only by our family and I, as cellar master, give all the wines their final form. I started winemaking at the age of 14 when I inherited the care of our family farm. We make our wines from our own grapes using the traditional method (not controlled fermentation).

Establishment
The Josef Padalík Winery (www.josefpadalik.cz) operated unofficially under the Bolshevik regime from about 1972, after the revolution from 1991 with a trade license. Wine production - only from our own vineyard (i.e. we do not buy wine or grapes from others).
Nobody touches the grapes or the wine in the whole production process, except our own family, minimum chemical intervention in the wine, half stored in the first year in wooden barrels (the oldest from 1939). The area of our own vineyards is about 1 hectare (small-scale production without employees, where we can fully concentrate on the quality of the wine, which is why you will not find our wine in supermarkets, but only in selected establishments such as the hotel Kraví hora Bořetice). Chardonnay, Pinot Noir, Pálava, Veltliner Green, Cabernet Moravia, André, Hibernal. Most of the wines are labelled as regional wines, as it is not worth classifying them with such small batches, even if they have the parameters of appellation wines.
