During the festivities, a closely watched historical procession leads through the town, led by representatives of the craft guilds, winemakers and members of the Mining Council. The mayor also takes part. Together with the bourbon police, they have an important task. They ensure that the bourbon is poured properly and that it is of good quality, and they can ask you for 'legitimacy' in the form of a bourbon passport with records of the bourbon houses visited.
