Vinařství Dvořáček LTM, s.r.o. is a small family business (father Lubomír, son Tomáš and daughter Martina Magdaléna), which has been growing grapes and producing distinctive great wines for several decades. They farm less than two hectares of their own vineyards and produce only dry wines with residual sugar well below 4g/litre, which are aged, ideally even fermented in barriques, without any additives and with minimal sulphur in the whole process of their preparation. The owner is the founder and chairman of the association Great Wines of Great Vineyards, the managing director of VVVV CZ s.r.o., operating a wine shop at Valtice Chateau and a member of the board of directors of the Union of Oenologists of the Czech Republic. Winemaking and viticulture is not only a hobby in this family, but a big heart affair for everyone.

Establishment
In 2005 we became the second Czech producer of kosher wines of the highest orthodox quality and, according to the data available so far, the only one in the world where kosher wine is produced in a completely non-Jewish environment. In processing the grapes we use all the latest oenological knowledge and experience of our own and our colleagues, recognized leading wine experts. We strive to make the wine we produce a unique, distinctive and inimitable great natural beverage. We use only the finest seedlings to plant our vineyards, with a directed cut to one stem and one horizontal pull in the vineyards. We fertilise only with organic or 'green' fertiliser, and all vineyards are permanently grassed with a multi-species mix of herbs. The harvest is strictly reduced and the grapes themselves are harvested in such a way as to achieve an overall balanced oenological ripeness of the grapes. All vineyards are managed under the integrated production system, the youngest vineyards dating from 2012 and the oldest from 1986. We process approximately 15 tonnes of grapes annually in a total of 10 varieties: Sauvignon, Chardonnay, Riesling, Traminer, Pinot Gris, Zweigeltrebe, Cabernet Moravia, Cabernet Sauvignon, Merlot and Pinot Noir. The grapes are always harvested at the highest quality, the average yield does not exceed 1.5 kg of grapes per bush in the long term, but harvests with yields well below 1 kg per bush are no exception. We produce about 15,000 bottles a year, mostly of wines with an appellation, we also produce ice wines and a significant part of our production is made up of barrique wines. All production is bottled. We preferentially focus on private clients, we rent VIP customer boxes to some of our regular customers. In addition to the modern, air-conditioned production and storage facilities, including the rented VIP customer boxes, the winery has a large modern presentation training and congress centre for up to 80 people. The new presentation and restaurant space in the main conference hall, built over the original development of a traditional suburban wine cellar and contemporary modern winery, seats 80 in a free table arrangement and a further 5 seats at the stylish bar. There is full technical equipment, digital data projection, high-speed internet with WiFi network, digital TV signal of twenty TV channels on a large screen, connections for individual power supply of digital equipment (computers, mobile phones, cameras, recording devices), split independently adjustable stereo sound system in each part of the hall, eco-friendly air conditioning and ventilation and adequate sanitary facilities. The centre is designed in such a way that the individual wishes of the participants of seminars, corporate events, training sessions, retreats, family events (christenings, graduations, birthdays, last farewells) or just friendly get-togethers in a small or even wider circle can always be catered for. Hot and cold meals are provided in the form of catering. We offer guided wine tastings from our own production and a tour of the modern production and storage facilities of the winery with expert commentary. In case of interest, we can arrange a musical performance of popular dulcimer music. We accept all credit cards except American Express. Accommodation can be arranged in guesthouses in Mikulčice, in neighbouring Moravská Nová Ves or in hotels in nearby Hodonín, including transport to and from the cellar.

Natural wines, barrique wines, red, white and rosé wines, cuvées, appellation wines, red wines produced by the method of cold maceration on the skins, white wines produced by the method of cryomaceration, wines aged in large American oak barrels and in a special concrete tank by Nico Velo from Italy. In 2005 we became the second Czech producer of kosher wine, which is produced in Moravia under the supervision of the Rabbi of the Jewish Community of Brno again after more than 60 years. Kosher wine from our production, thanks to a very gentle processing technology, practically without the use of any additional ingredients and with the elimination of the pasteurization process, entitles the producer to use the attribute "not yaiyn mevushal" ("not cooked" = not pasteurized), which is essential for consumers from the ranks of Orthodox believers, i.e. those who strictly and accurately observe all the provisions of the Torah. This wine is approved for use "went Pesach" ("Kosher for Passover").
