We founded the Lípa Winery together with my younger brother in 2000 and it is actually a continuation of the family tradition of wine production, which was started by our grandfather, continued by our father, and which we continue together with my brother. Thanks to the foresight of our parents, one of us graduated from winemaking and the other from hotel school. A decision that today, with the passage of time and the experience we have gained, we both perceive as without exaggeration visionary and at the same time as a determining factor in the further direction, development and future of our winery and business in general.

The management of a winery, and especially a top winery, is always about a distinct approach, about applying one's principles and rules without compromise, and at the same time about realizing the personality of the winemaker. Only in this way are you able to achieve unique wines with an unmistakable character in your winemaking endeavours! But how do you achieve this when there are two of us? It's like black and white, each is different, expressing and presenting different opinions, attitudes and life experiences. A seemingly intractable situation, seemingly. Everything was solved for us long ago by my parents with their truly visionary decision - Marek wine, Michal gastronomy Two fields that complement each other perfectly, are closely related and benefit from each other's interconnection. In practice, it seems that Marek, who produces the wine, turns to Michal when deciding on the character of each wine and we both consult together what the final sensory expression of each wine should be, even in terms of pairing it with the most suitable food. Our joint decision-making is far from just about the vinification process itself (grape processing and wine production), but is also taken into account throughout the entire growing process of the vines and all the work and interventions in the vineyard. Our sparkling wine comes directly from Mikulov from the beautiful vineyard Pod Svatým kopečkem I. We hand-picked the Pinot Noir and Chardonnay varieties and pressed the whole grapes without de-stemming. The two dry wines are combined in a ratio of approximately 50:50. The finished cuvée was then racked and prepared for secondary fermentation. The sparkling wine is produced using the traditional method (méthode traditionelle) by maturing and lying on the lees for 28 months in our archive cellar in Brod nad Dyjí. The bottles were shaken by hand during the ageing period and at the end of May 2016 they were shot. In September of the same year, the sparkling wine was launched in an exclusive and limited batch of 1,624 bottles. Each bottle is an original with a handwritten numbered label. Thanks to the character of the 2013 vintage, we were able to produce a top-notch Brut and Brut Nature, with a distinct minerality, fine sparkling and long persistence. An elegant wine for truly festive occasions or as an exclusive gift.
