About winemaker
Polivka Winery is a young promising winery that uses modern technology and puts great emphasis on new knowledge in the field of oenology, but also does not forget the experience and knowledge of our ancestors. We manage our own vineyards, but also leased vineyards. In the coming years, we will be planting more. We take a gentle approach to grape processing and make wine for our customers. In our portfolio you will find classic quality wines, late harvests, but above all we focus on Barrique and Sur-lie wines. Basic characteristics of wine
Pálava was cultivated by Ing. Josef Veverka by crossing the varieties Gewürztraminer and Müller Thurgau. Probably the best results are achieved mainly in the Mikulov subregion, in the vicinity of the municipalities of Perná, Pavlov or Bulhary, then in Lechovice, Popice or Čejkovice. Pálava is often automatically perceived as a sweet wine, i.e. with a higher residual sugar but this is not always the rule. In the dry version we discover the charm and beauty of this variety.
