The Lobkowicz family began to engage in winemaking from 1753 onwards. An important period for the development of chateau winemaking was the turn of the 19th and 20th centuries. During this period, the company was significantly modernised according to the French model, Chateau Mělník sparkling wine was produced here (1896), and the Ludmila vineyard below the chateau was restored. A new era dawned in 2009, when wine production returned to the Mělník chateau after the reconstruction of the St. Joseph cellar, which, incidentally, was excavated in 1909 under the chateau courtyard.
Rhine Riesling is an ancient, prized variety used primarily for the production of high quality wines. This variety thrives very well in Litoměřice, Mělník, Znojmo, Strážnice and especially in the Slovácko subregion around the town of Bzenec.
