The THAYA winery is located on the outskirts of the village of Havraníky in the Znojmo region. The newly built winery complex is not only for wine production, but also offers complete wine tourism services such as a hotel and restaurant for customers. The basic philosophy of the winery is respect for naturě and respect for the region, which is why you can find the river Dyje - Thaya in German - in their name.

The winery is very aware that the basis for an exceptional wine is a quality raw material. The winery currently farms 105 hectares of its own vineyards. The vineyards are located in the cadastre of five renowned wine-growing municipalities in the Znojmo region. These are the villages of Hnanice, Šatov, Havraníky, Vrbovec, Dyjákovičky. Their own grapes give them an advantage and a head start in quality. In THAYA Vinařství they know very well that quality and healthy grapes are an important aspect in the production of wine of the highest quality. The vineyards are managed in a higher degree of integrated production and part of the vineyards are in organic regime. They strive to work gently in the vineyards in symbiosis with the local natural conditions. The emphasis is on lower yields per bush, while striving for stable yields without fluctuations. These steps help the longevity of the vines, which represent a huge potential for great wines.

THAYA winery strives to maintain traditional practices in wine production while refining the wine with 21st century technologies. It also tries to work as gently as possible, not interfering with the wine, but rather essentially guiding it by the hand along its journey. They like to work with different types of vessels in their production. They use stainless steel tanks for the basic and fresh lines, and do not shy away from vinification in concretetanks, and the use of different wooden barrels is key for the premium lines. They use different sizes, types of firing and lengths of wood drying to achieve the optimum result for their wines.

Jakub Smrčka, who was named Enologist of the Year in 2021, takes care of the entire production process at the winery. In 2020, their 2018 Pinot Blanc was the overall winner of the Salon des Vins.
